Where every
bowl begins

Our tonkotsu is a recipe perfected over many years: pork bones cooked down, then condensed under ultra-high pressure so the umami concentrates instead of thinning out. The clear broth takes the opposite road — low heat, slow hours, nothing rushed. The chicken broth is the light one, finished with the scent of yuzu. Keeping the menu small is what lets us look after all three.

The midday
set

Served from noon until 3:30, every day we're open. Pick your bowl, then add a small plate alongside it. It's the easiest way to try two things at once, and generous enough to keep you going all afternoon.

Choose a bowl

Any of our signature ramen — tonkotsu, black tonkotsu, spicy, clear, yuzu jidori chicken or vegetable.

Add a side

A mini yaki mayo cha-siu rice bowl, or a plate of our handmade gyoza. Both are lunch-portion.

Eat it hot

Bowls come out quickly and are meant to be eaten right away. Monday through Friday lunch ends at 3:30 and the kitchen reopens at 5:00; on weekends we serve straight through.

Our story

We opened on
August 23, 2024

Bincho is chef and restaurateur Toshiro Tagami's first restaurant — a small room on Ventura Boulevard that he built around one idea: get the broth right, and keep the rest simple.

The menu doesn't stretch far, and that's on purpose. It stays tight so we can look after every bowl that leaves the pass, and get it to you while it's at its best.
